This stir-fry does not contain egg, wheat or dairy.
Where oh where does the weekend go? Lately I find myself wondering this. It seems like we don't really stop all weekend and then there's always a lot of things to do still on Sunday evening. It gets to be exhausting.
In the midst of the list of chores and activity schedules for my kiddos I did manage to do a little cooking this morning. I get about a couple of hours after breakfast on Sundays to clean up and prep for the week before we head out to swim class. After that, it's all about the chores and our weekly library visit.
This stir-fry was inspired by a new veggie mix that caught my eye this week at Trader Joe's. For all I know, it's been there for weeks and I just noticed it. I decided to borrow its name for my recipe. I hope Trader Joe's doesn't mind.
Do you know that cruciferous vegetables are rich in vitamins, minerals, fiber and phytonutrients which help lower inflammation? It's a good idea to start adding some to your diet if you don't eat them regularly. This mix has a good number of them!
Ingredients
4 servings
1 bag of Cruciferous Crunch vegetable mix
1 bag of organic riced cauliflower
3 green onions
1 clove of garlic
1 can organic white beans
1/2 cup cranberries
olive oil
salt

Wash, peel and cut the garlic and the onions. Saute for a couple of minutes in olive oil until fragrant. Add the cruciferous mix. Saute for few minutes. Add the white beans. Cook for a few minutes. Add the cauliflower rice and cook for a few minutes. Stir gently. Season to taste.
This dish could not be easier and it comes together in 30 minutes or less. It yields 4 servings, so you can pack 4 lunches with it. It tastes amazing and is packed with good nutrition. I love the zing that the cranberries provide to this dish.
