If you follow me on Instagram you know that I love turmeric. I enjoy this spice in lattes and smoothies. It has both antioxidant and anti-inflammatory properties so it's a good addition to your diet.
It was a matter of time before I found a way to enjoy my turmeric in a cookie. If you are gluten-free like me you probably know how hard it is to get healthy snacks on the go. These turmeric collagen cookies are flavorful and healthy with a decent amount of protein to keep you full.
Here's what you need to make these at home:
Ingredients:
2 cups Bob's Red Mill almond flour
1/4 cup Bob's Red Mill coconut flour
1/4 cup tahini
1 banana (mashed)
2 tbsp ground flaxseed + 6 tbsp water (2 flax eggs)
1 scoop Vital Proteins collagen peptides
1 tsp turmeric
2 tsp ginger
1 tsp cardamon
1/2 tsp baking soda
1/4 tsp salt

Preheat the oven to 350 F. Line a baking sheet with parchment paper. Peel and mash the banana. Incorporate the rest of the wet ingredients and mix well. In a separate bowl, mix the dry ingredients together. Combine the wet and dry ingredients. Use 1.5 tbsp mix/cookie. You can flatten the cookies with the help of a fork. They will be a little sticky but don't worry about it. Bake the cookies for 15 minutes at 350 F. Let them cool on a rack and enjoy!
These cookies made my kitchen smell amazing while they were baking. They are soft and have a fudge-like texture. They are not doughy or crumbly.
