LUNCHBOX IDEAS :: Roasted Sweet Potato and Pepper Red Quinoa Salad


Happy Wednesday Friends!  It's cold and dreary here in the Northeast and I'm home with my Little Guy.  It's been quite the ride since Friday but I think we are finally on the mend.  He was diagnosed with strep throat yesterday after our second doctor visit in 3 days and the antibiotics are already working wonders.  


Here's another lunchbox idea for you.  It's very Fall-like, easy to make, nutritious and filling!  I have been posting these on Instagram but will be adding them to the blog so that they are all easier to find.  Here's what you need to make this delicious Fall salad!

Ingredients:
  • 1 cup red quinoa
  • 2 sweet potatoes
  • 1 red pepper
  • 1 orange pepper
  • olive oil
  • salt and pepper to taste

Preheat the oven to 425 F.  Wash and peel the sweet potatoes.  Wash the peppers.  Cut the sweet potatoes into cubes and the peppers into slices.  Drizzle with oil and add salt and pepper to taste.  Roast in the oven for about 35 minutes.  In the mean time, wash 1 cup of red quinoa and cook it on the stove.  Allow the quinoa to cool down.  When the potatoes and peppers are ready, allow them to cool down.  Mix the quinoa with the potatoes and peppers.  Drizzle olive oil to taste.  Enjoy!



Is there anything better than the smell of freshly roasted peppers on a chilly Fall morning?  This salad packs plant protein from the quinoa, vitamin C from the sweet potatoes and peppers and good fiber among others.  It's simply delicious and easy to prepare.  Enjoy!
