Gluten-Free Protein Fig Donuts


These low-carb donuts have no gluten, egg or dairy.  

Happy Friday!  Can you believe it's almost Labor Day weekend?  We are leaving for York (Maine) tomorrow.  We had to reschedule our annual trip this year to the end of the season pretty much this year because I had to attend new teacher's orientation at my new district during our planned vacation week.  I've never been a fan of packing for a trip so here I am, procrastinating on the inevitable chaos as I try to get everything organized, sharing with you this new recipe.



I hope you love figs too as much as I do.  The box I got from Trader Joe's last week was phenomenal and I'm looking forward to purchasing some more after we get back from vacation.  Since my kiddos seem to be all about donuts these days, I decided to make fig donuts too.  I realize it's not a traditional flavor but you'll find that they are delicious, if I don't say so myself.



Here is the recipe you need:

Ingredients:














  • 1 cup Bob's Red Mill gluten-free garbanzo flour
  • 6 pureed figs (about 1/2 cup)
  • 1 scoop Vegan Smart pea protein powder
  • 2 tbsp coconut oil
  • 1/2 cup unsweetened almond milk 
  • 1 tsp apple cider vinegar
  • 1 tsp baking soda
  • 1/4 tsp sea salt

Preheat the oven to 350F and spray the bottom of a donut tray with oil.  Wash the figs, peel the tails off and puree them in a blender.  You don't need to peel the skin off but you can if you want to.  Add the rest of the wet ingredients.  In a separate bowl, mix the dry ingredients.  Combine the wet and dry ingredients.  Add the baking soda and the apple cider vinegar.  This mix is enough for 6 donuts.  I used 4.5 tbsp of mix per donut.  Bake the donuts for 15 minutes or until a knife comes out clean.  Let the donuts cool or a rack before eating.  Enjoy!

I like how they have a good amount of protein in them but are still relatively low in sugar.  It's nice to have a good iron content, specially on a gluten-free product.
