Gluten Free Banana Chocolate Chunk Blondies


These blondies are gluten-free and dairy-free.  They are made with chickpeas and quinoa flour so they are nutrient-dense.  


It's been three days now of drizzle, thunderstorms, rain and now fog (?) in the morning.  The fog is the part that just drains my energy.  I feel like lounging in my pj's on the sofa all day with a good book, but, with young kids at home, that's pretty much a pipe dream.  At least we got some baking in yesterday afternoon just before snack time and the results were spectacular.  You are going to love these blondies!


Here is the recipe:

Ingredients:
  • 1 can garbanzo beans (rinsed)
  • 1 egg
  • 1 tsp vanilla
  • 2 bananas
  • 1/2 cup Bob's Red Mill quinoa flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup Enjoy Life chocolate chunks
Preheat the oven to 350F and spray the bottom of an oven baking dish.  The one I used is about 6x8 inches.  Wash the chickpeas and add them to a blender (I use a Ninja).  Blend until everything is well incorporated and you can't see chickpea skins.  Add the dry ingredients and mix gently.  Pour the mix onto the baking dish and sprinkle the chocolate chunks on top evenly.  Bake the mix at 350F for 25 minutes or until a knife comes out clean.  Allow the blondies to cool on a rack before serving.  This mix is enough for eight blondies.


Here are the nutrition facts for these blondies.  They have the perfect calorie content for a snack and a good amount of protein in them.  My kiddos enjoyed them with a glass of milk for added protein.  I like how they have a good amount of iron in them from the chickpeas and the quinoa flour, perfect for growing little bodies.



I can't get over these blondies!  They are soft and fudge-like and feel like such an indulgence with those chocolate chunks on top.


Don't you love the ooey gooey chocolate chunks after they come out of the oven?  My kiddos loved these blondies.  Hope you enjoy them too!
