Cranberry Walnut Snack Balls

These easy to prepare snack balls are filling and will satisfy a sweet tooth.  They are gluten-free and low in carbs and sugar.  

Happy Friday!  Snack balls have been a hit at my house as of late so I am working on new flavors.  I found walnuts and cranberries as I was sifting through my kitchen cabinets so I decided to use them in today's recipe.  I like using coconut oil because the snack balls harden better in the fridge.  Just be cautious if you are out and about on a warm day because they will melt.



Here is the recipe for these snack balls:
Ingredients:
  • 1 cup coconut oil
  • 1 scoop Vegan Smart protein powder
  • 1/4 cup walnuts 
  • 1/4 cup cranberries
  • 1/2 cup coconut flakes

Chop the walnuts and the cranberries on a cutting board.  Mix the coconut oil with the protein powder until the protein powder is well-incorporated.  Add the cranberries and walnuts and mix well.  Place the mix in the fridge for about 20 minutes until the coconut oil hardens.  Scoop out 1.5 tbsp of mix and roll it into balls.  Coat the balls with coconut flakes and place on a plate lined with parchment paper.  Let the balls sit in the refrigerator for about another 10-15 minutes and then transfer to a storage container.  Enjoy!



These balls are delicious!  They taste a little bit like white chocolate.


They will satisfy a sweet tooth if you feel like chocolate after hours.  Since they are low in sugar, they are satisfying!


Here are the nutrition facts for these snack balls.  The serving size is one ball.  Notice how they have a calorie content close to that of a nutrition bar but much less sugar.  The high fat content will keep you full.
