Gluten-Free Lemon Coconut Power Balls

These lemon coconut power balls taste like a treat.  Literally.  It's exactly what I had in mind when I set out to make them right before dinner.  My best recipes tend to come together like this, when I least expect it.  I am always amazed at that.  




Here's what you need to make these power balls.  I'm using the Maple Ladders gluten-free cereal from Trader Joe's.  My kids are obsessed with it.  It's very low in sugar and has a good amount of protein in it so I make them trail mix with it for snacks.

Ingredients:
1/2 cup Maple Ladders cereal from Trader Joe's
2 scoops Vegan Smart vanilla pea protein powder
1/4 cup coconut oil
2 tbsp maple syrup
1 tsp lemon extract
juice of 1 lemon

Grind the cereal using a blender.  Set aside.  Melt the coconut oil in the microwave.  Add the rest of the ingredients and mix well.  Use 1.5 tablespoons of mix per ball.  Scoop out the balls (1.5 tbsp/ball) and let them sit in the fridge for about 10 minutes so they harden.  I placed them on a plate lined with parchment paper to prevent them from sticking to the plate.  Make sure you don't let them sit at room temperature for long before enjoying them because they will get oily.  This recipe makes about 6 power balls.



Serving size here is 1 power ball.  They will satisfy a sweet tooth!  Since they have a good amount of protein in them, they work well as a snack.
