Baking has become a bit of a meditative practice for me. At the end of the day, specially if bedtime has been challenging, I love my quiet time baking in the kitchen playing around with my flours. I find it fun and relaxing! Instead of giving my full attention to my breath and my state of being, I center my focus on the flours I will use, or the flavors I want to create. Try it! The clean up is not that bad. This week, I picked up some millet flour at the store to try something new. It is a good source of protein, minerals, fiber and antioxidants. I paired it with garbanzo (chickpea) flour for a good dose of protein overall.
Here is the recipe I used:
Ingredients
1 cup almond flour
1/2 cup millet flour
1 cup apple (grated)
1 tsp almond extract
1 egg
1 egg white
4 oz unsweetened applesauce
1 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/4 tsp salt
2 tbsp hemp seeds

I mixed the wet and dry ingredients separately and then combined them together. This mix is enough for 5 large muffins. I baked the muffins at 350 F for 17 minutes. My kitchen smelled delicious!
The muffins have a soft texture with a slight nutty taste from the hemp seeds. They were a hit this morning with my kiddos!
Here are the nutrition facts for these muffins. Not bad at 6.8 g of protein per muffin!
