Gluten-Free Banana Beet Donuts

These donuts are a little out of the ordinary but they are packed with good nutrition.  Beets are high in iron and also contain vitamin C which is good for our immune system and essential minerals like potassium and manganese.  I was hoping that the beets would give these donuts a pink (-ish) hue but that obviously needs some more work.  The bananas balance the beets perfectly and add some natural sweetness to these donuts.  You would never know they have beets!

The hemp seeds in these donuts provide a source of protein, mineral and omega-3 and omega-6 fats and you can't see them either.  They do contribute to the slight nutty taste in these donuts.

Here is the recipe I used:

Ingredients
1 cup almond flour
1/4 cup garbanzo flour
I large banana (with brown spots)
1 medium beet (roasted at 350F for 30 min)
1 egg
1 tsp vanilla
1 tsp baking soda
1/4 tsp salt
2 tbsp hemp seeds

I roasted the beet for 30 min at 350F ahead of time so that it was soft.  Then I shredded the beet to make sure I would not have any small chunks and blended it with the banana in my Ninja blender with the egg and the banana.  In a separate bowl, I mixed the dry ingredients and then I combined them with the wet ingredients.  This mix is enough for 6 donuts.  I baked the donuts at 350F for 20 minutes.  The donuts have a light texture and a slight nutty taste.  You wouldn't even know they have beets in them!
This is an excellent way to sneak in more veggies into kiddos' meals.  It is such a challenge to get them to eat the right number of servings daily, don't you think?  I find that if they are disguised in a fun item like a donut, chances of them rejecting them are minimized.  It works with my daughter!
