Gluten-Free Apple Breakfast Cookies

Going back to the routine can be tough for kiddos after snow days, specially if they get two in a row followed by the weekend.  Yesterday, I figured I would try to sweeten their morning with a special treat-  cookies for breakfast!  Cookies make everything fun, right?  I used apple in these cookies to break away from bananas which are my kiddos' favorite.  I've tried blueberries and cranberries and they just pick them out from the bread or muffin-  kind of fun to watch.  

 These cookies smelled amazing while they were baking, a perfect mix of cinnamon and baked apple.  I added a scoop of pea protein powder to the mix to increase their protein content and I was surprised how well the pea protein powder blended in.  In the past, I've never been happy with protein powder in baked goods.  They always end up with a gritty texture in my hands.  This pea protein powder from Naturade is all natural and my kiddos love it in smoothies with almond milk.


 Here is the recipe for the cookies (makes about 7 cookies-  2 tbsp/cookie):
1 egg
2 tbsp agave nectar
1 tsp vanilla
2 tbsp coconut oil
2 cups almond flour
1/2 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1 apple grated
1 scoop Naturade pea protein powder

I used 2 tablespoons of mix per cookie and baked them at 350 F for 15 min.  If you like them a little crunchier, just leave them in the oven for a couple more minutes.  If you are interested in the nutritional content, there are 6 g protein and 2 g fiber in each cookie.  I served them with some fruit on the side.  They were a crowd favorite!
