Gluten-Free Thumbprint Cookies

Somehow I got myself into yet another commitment this holiday season.  I signed up for a cookie swap at school.  Part of me saw it as an excuse to bake with my daughter so I did not hesitate when I added my name to the list.  Unfortunately, she came down with a cold this weekend after our first snowfall (why do kids tend to get sick when it snows?) so I flew solo on this one. 


Even though I am a big chocolate fan, thumbprint cookies always get my attention at gatherings so I wanted to bake a batch.  I found this recipe online (https://www.bakerita.com/jam-thumbprint-cookies-gf-vegan) and did not make a lot of changes to it.  I just added 1 tsp vanilla extract to the mix.  I like when you don't need a lot of ingredients for cookies and this recipe has the added advantage that I could mix the dough the night before so that it would be ready to go in the morning after breakfast. 


These cookies are moist and flavorful.  The coconut oil is not noticeable but it makes the cookies moist.  The strawberry jam adds a hint of sweetness to the nutty taste of the almond flour.  All in all, another baking success-  I hope my coworkers agree tomorrow!  Fellow mamas, if you are in need of an easy recipe for gluten-free cookies give this one a try. The almond flour is more pricey than average but it's the best in my opinion for gluten-free cookies and it will last you a while.
