BAKING WITH MY DAUGHTER :: Gluten-free gingerbread cookies

We are gearing up for Christmas day!  The kiddos are beyond excited.  Today, we baked some gluten-free gingerbread cookies for Santa.  I was inspired by the gluten-free gingerbread man we picked up at the bakery for the kids to decorate tomorrow.  The smell of freshly baked gingerbread goods is not easy to forget!


As we were preparing this cookies, my daughter picked up a new skill in the kitchen.  She can now roll cookies in her hand, flatten them and dip them in sugar.  There are so many opportunities to teach them things in the kitchen and the memories you make along the way are priceless. 


For the recipe, we followed this one:  http://www.runningwithspoons.com/2016/12/03/flourless-gingerbread-cookies/.  We baked the cookies for 10 minutes.  The cookies are moist, a little chewy and have a perfect balance of ginger and molasses.
