Happy Monday!  I can't believe that we only have 2 more weeks of summer left.  It went by so fast!  This easy summer salad is flavorful and packed with protein so I know you are going to love it.  If you like black bean salads, check out this one too.  It is very refreshing.  
Here's what you need to make this salad at home.

1 can of black beans (drained)
1 cup of cooked quinoa
1 mango
2 tbsp cilantro
2 tbsp red onion
1 green pepper
2 jalapeno peppers
1 avocado

2 tbsp olive oil
1 tsp cumin
juice of 1/2 lemon
salt to taste

Cook the quinoa on the stove at low heat until fluffy.  I used 2 cups of water and 1 cup of quinoa.  Dice the mango, onion, avocado, and peppers.  Add to bowl.  Wash and drain the beans and add to the bowl.  Fold in the quinoa gently and combine together.  Add the dressing and mix well.  Enjoy!

This is such an easy salad to make.  It does require a ripe mango though.  I changed my mind last minute and added avocado too.

I find it so relaxing to chop vegetables.  Do you feel the same way?  If you want this salad super spicy, leave the seeds in the jalapenos.  If you don't, then remove them.  

This salad was enough to feed 2 people and we have one more serving for tomorrow.  If you want a sweeter dressing, you can substitute the lemon with lime.
