Ingredients
1.5 cups almond flour
1/4 cup potato starch
1 tsp baking soda
1 pinch of salt
1 tsp pumpkin spice
1/2 cup pumpkin puree (always Libby's)
1 tsp maple flavor
1 tsp vinegar
2 eggs
3 tbsp coconut oil (melted)
1 tbsp maple syrup
Preheat oven to 350F. Mix wet and dry ingredients separately. Combine and add vinegar. Mix well. Use 4.5 tbsp of batter per donut and smooth the tops with the back of a wooden spoon. Bake in the oven for about 15 minutes or until a toothpick comes out clean. Allow cooling on a rack. Store in an airtight container in the fridge.
I ended up freezing some of these after they cooled down since we also had a loaf of chocolate pumpkin bread for the week and the kids wanted to eat that first. They did just fine!
