Pumpkin Maple Donuts (Gluten-Free)

If you are a fan of pumpkin too, these pumpkin maple donuts are for you!  They are so seasonal and will put a smile on your face in the morning.

I love baking donuts at home because they are so easy to make.  This batter comes together quickly and the end product is so worth it!

Here are the details you need to make these donuts at home:

Ingredients

1.5 cups almond flour
1/4 cup potato starch
1 tsp baking soda
1 pinch of salt
1 tsp pumpkin spice
1/2 cup pumpkin puree (always Libby's)
1 tsp maple flavor
1 tsp vinegar
2 eggs
3 tbsp coconut oil (melted)
1 tbsp maple syrup

Preheat oven to 350F.  Mix wet and dry ingredients separately.  Combine and add vinegar.  Mix well.  Use 4.5 tbsp of batter per donut and smooth the tops with the back of a wooden spoon.  Bake in the oven for about 15 minutes or until a toothpick comes out clean.  Allow cooling on a rack.  Store in an airtight container in the fridge.

I ended up freezing some of these after they cooled down since we also had a loaf of chocolate pumpkin bread for the week and the kids wanted to eat that first.  They did just fine!

Here are the nutrition facts for these donuts:

They will keep you full through lunch!  And they are very portable too if you are running behind.

Let me know if you try them!
