Happy Monday! This easy watermelon salad is a must-try! It's summer in a bowl essentially and comes together in a breeze. What more can you ask for?
I was initially only going to have watermelon and my vegan cheese but then I realized I had leftover kale and thought, why not? The cashews were a final touch for texture. They complement the watermelon and vegan cheese pretty well!
Here are the details you need to make this salad at home.
Ingredients (for 2 people)
about 1/3 of a watermelon (diced)
1 bunch of kale
1 cup of cashews
1 lemon
olive oil and salt
Dice the watermelon. Wash the kale. Fold the leaves together and cut off the main stem. Roll up the kale leaves and cut them into slices. Combine the watermelon and the kale. Mix well. Add the cashews. Mix well. Add the juice of 1/2 a lemon. Season and drizzle with olive oil. Mix well. Enjoy!
