LUNCHBOX IDEAS :: Mushroom Salad


We made it to the farmers market last Saturday and it felt like an achievement of sorts because we were there before 10 and we even stopped for coffee along the way.  It was so fun though to walk around and check out all the vendors.  I missed it!  

I'm always hoping to find a gluten-free pasta or bakery stand at the farmer's markets but sadly it does not happen often.  We did see a mushroom stand which caught our attention.  I was surprised by all the different varieties!  We went with the mix so we could get more than one type.  This mix included Baby Belle, Shiitake, Hen of the Woods, and Oyster among others.  Have you heard about any of these? 


I was very intrigued and decided we had to make a salad with them.  We had spinach at home which I thought would pair perfectly.  Here are the details you need to make this salad at home.

Ingredients

1 bag of spinach
mix of mushrooms
1/2 cup hemp seed hearts
1/4 cup sunflower seeds
olive oil, salt
lemon
1 clove of garlic


Wash the mushrooms and slice.  Peel and slice a clove of garlic.  Sautee in a little bit of oil until fragrant.  Add the mushrooms and saute for a few minutes.  Set aside.  Wash the spinach.  Add the hemp seed hearts and sunflower seeds.  Mix well.  Season with olive oil and salt and plate.  Add the mushrooms on top and serve.  Enjoy!




It's such an easy salad!  I loved the mix of earthy and nutty flavors here.  It's also packed with nutrition.  


Even Nahia tried this salad which was so nice.  She's definitely trying to branch out and try new things and I'm loving that she's into salads now.  She's already asked if we are getting more mushrooms next Saturday to make this salad again.

I think we will!
