White Bean Salad

 


Happy Monday!  We are back in school after April vacation.  It went by so fast!  I can't believe we are 8 weeks away from summer vacation though.  We have been enjoying lots of time outdoors lately and I've also been going on long walks around the neighborhood which feels so nice.  Sometimes I listen to a podcast while I walk.  Other times, I just listen to music. 
With spending so much more time outdoors, simple meals are key.  I made this easy white bean salad on a whim this weekend and it is so good!  Here are the details you need to make this at home.  Not pictured in the ingredients are the hemp seeds I decided to add last minute!  

Ingredients
 
1 box cherry tomatoes
1 cup white beans (cooked)
5 mini cucumbers
1/2 cup hemp seeds 
olive oil
salt, lemon




Wash the white beans and boil in water until tender.  Drain and set aside and allow to cool.  Wash the cherry tomatoes and slice in two.  Set aside.  Wash and slice the cucumbers.  Set aside. Mix the white beans, tomatoes, and cucumbers.  Add the juice of 1 lemon.  Mix.  Season with salt to taste.  Add olive oil and 1/2 cup hemp seeds.  Mix well.  Enjoy!


So easy yet so, so good!  I love the creamy texture of the hemp seeds when they blend with the olive oil and lemon juice.
