LUNCHBOX IDEAS :: Citrus Spinach Lentil Salad

 


Happy Monday Friends!  If you have today off too, I hope you are having a good day.  It's been sunny here for most of the weekend with temperatures in the 40s so we have been enjoying the outdoors.

I have relied on sandwiches for school lunches so far.  We don't have a microwave right now, we can't eat as a group and I don't have that much time either so quick sandwiches seemed practical.  It does, however, get boring so I'm working on adding cold salads to the rotation. 

We got some fresh spinach from the store this week so I made a quick salad with lentils and quinoa.  I added some citrus for an extra flair.  I do love adding citrus fruits to my cooking at this time of the year because it makes me think of Spring. 


Here are the details you need to make this salad at home:

Ingredients

2 lemons
1 cup quinoa (cooked)
1 cup lentils (cooked)
1 bunch of organic spinach 
1/2 red onion
salt
olive oil
zest of two lemons
juice of 1 lemon

Wash the quinoa and cook in boiling water until fluffy.  Set aside.  Wash and cook the lentils until tender.  Set aside.  Wash the spinach, cut the tails off and chop.  Wash, cut, and chop the red onion.  Combine with the spinach.  Add the quinoa and lentils.  Fold gently.  Season to taste.  Add the lemon zest and lemon juice.  Mix gently.  Drizzle olive oil and mix gently.  Enjoy!

I served this salad in a bowl and loved adding a slice of lemon on the side for color.


This recipe yields four servings so I will enjoy it for lunch tomorrow at school.
