LUNCHBOX IDEAS :: Citrus Green Bean Salad with Beets

This dish does not contain wheat or dairy.

Happy Monday!  I am back after a bit of a hiatus.  I hope you enjoyed your July 4th!  We had a good day with the kids.  I was a little wary given the weather forecast but the day worked out just fine.  The kids were busy and engaged all day and we even got to go in the pool as the day warmed up after all.



Sunday started off slow for us but we managed to do everything on our checklist by the end of the day.  I love days like that.  I had not done my Sunday cooking for a few weeks now so I had that at the top of my list!

This citrus green bean salad dish has been quite a hit!  It does require some roasting in the oven so make sure you don't pick a muggy summer day.


Here are the details you need to make this salad at home.

Ingredients 

2 bags of green beans
1 bunch of golden beets
2 scallions
2 oranges
zest of one orange 
1/4 cup hemp seeds
salt and olive oil


Preheat the oven to 375 F.  Line a pan with an unbleached sheet of parchment paper.  Wash and peel the beets.  Slice in half.  Place on pan, season with salt, and drizzle with olive oil.  Roast for about 25 minutes until crunchy.  Remove from the oven and let cool.

Wash the green beans and cut off the ends.  Boil in water for about 12- 15 minutes until crunchy.  Drain and set aside.  Add beans to bowl and mix with beets.  Peel the oranges and slice into small pieces.  Combine with beans and beets.  Add 1/4 cup hemp seeds.  Wash and cut the scallions.  Add to bowl.  Mix well.  Add the zest of 1 orange and season with olive oil and salt.  Mix well.

Let the flavors blend in the fridge overnight before serving.


I love the contrast of the scallions with the oranges and the beets in this salad.  
The nutty taste of the hemp seeds complements the green beans nicely too.  It's such an easy salad to make!
