Banana Bread (Gluten-Free, Low Carb)

This recipe does not contain wheat or dairy.



I have said it before and I'll say it again:  there's nothing like warm banana bread to start your day.  We have upped our breakfast game over this quarantine, and now we like to add a little butter to our bread and grill it on the stove.  It's amazing!


I tried my new silicone bread mold this past weekend, and I'm loving it so far.  I think the bread rises better in it.  I mean, look at this baby!  It has a soft texture with just the right amount of everything in it.  You wouldn't know it's gluten-free!


Here's what you need to make this bread at home.

Ingredients

4 bananas
1 cup Bob's Red Mill almond flour 
1/2 cup Bob's Red Mill gluten-free all-purpose flour 
4 eggs
1/4 cup peanut butter
1 tsp cinnamon
1 tsp vanilla
1 tsp baking soda
1/4 tsp salt

Pre-heat oven to 350 F.  Peel and mash the bananas.  Mix wet and dry ingredients separately.  Combine.  Add mix to a silicone mold and bake for about 45 minutes or until a knife comes out clean.  Allow to cool, remove bread from mold and slice.  Store in an airtight container in the fridge.  Enjoy!
