Happy Friday! We have a heat wave coming our way this weekend so I'm very happy we are heading to the beach. I shared these donuts on my feed a week ago or so and I'm finally getting to post the recipe. Being at home full-time with young kids is no joke! I love the extra time with them but it's very challenging to get any work done.
I've been on this paleo kick this summer and wanted to make some lemon blueberry donuts. It's a summer classic, don't you think?
Here's what you need to make these donuts at home.
Ingredients:
1 cup Bob's Red Mill almond flour
2 tbsp coconut oil
1 tsp apple cider vinegar
1 tsp baking soda
1/4 tsp salt
2 tbsp lemon juice
zest of 1 lemon
1 tsp lemon extract
2 eggs
1/2 cup blueberries
1 tsp apple cider vinegar

Preheat the oven to 325 F and spray the bottom of a donut tray with oil. Mix the wet and dry ingredients in separate bowls. Combine them. Add the baking soda and the apple cider vinegar. This mix is enough for 6 donuts. I used 4.5 tbsp of mix per donut. Flatten the tops with the back of a spoon. Layer the blueberries on top of the donuts and press them in very gently. Bake the donuts for 20 minutes or until a knife comes out clean. Let the donuts cool on a rack. Enjoy!
Here are the nutrition facts for these donuts. Not bad, don't you think? They have a good amount of fat without a huge carb load. These are soft on the outside but super flavorful!
I have not tried this recipe with frozen blueberries but use those regularly in smoothies. Do you use frozen blueberries in your baking?
