LUNCHBOX IDEAS :: Summer Protein Salad

This salad does not contain egg, dairy or gluten.

It's officially the last week of school and I honestly can't believe it!  We just have 2 more days of finals and we'll be out on the first day of summer.  I love it!  I'll be sharing soon what's on our summer bucket list.  Do you have yours ready?

This salad is super simple to put together but flavorful and refreshing.  It's perfect for those warm summer days when you'd rather be outside enjoying the weather than cooking in your kitchen.  All you need is 3 simple ingredients!  I love its simplicity.

Here are the details you need:

All ingredients are from Trader Joe's 

4 servings
1/4 cup Navitas hemp seeds
grape tomatoes 
cannellini beans 
1 lemon
olive oil 

Rinse the cucumbers and dice into small pieces.  Rinse the tomatoes and cut in half.  Rinse the cannellini beans.  Combine the tomatoes, cucumber and cannellini beans.  Add 1/4 cup of hemp seeds and mix well.  Drizzle olive oil and the juice of one lemon.  Season with salt and combine well.  Voila!  Lunch is ready.  

Don't you think it looks yummy?  Tomatoes are a wonderful addition to your diet in the summertime in particular because they are high in vitamin c, an antioxidant that can help you fight against sun damage.  Cucumbers are also high in antioxidants and promote hydration so they are perfect for warm weather.
