LUNCHBOX IDEAS :: Spinach Blueberry Salad

This salad does not contain dairy, egg or gluten


Happy Tuesday Friends!  I know I've been MIA from the blog for the past week or so. It's just been so busy.  Thank you for continuing to support me!  This week has been no different and we are also dealing with some typical New England spring weather- dreary days that feel like Fall and leave me longing for sunshine and warmth.  



Let's talk about this salad though.  They had the best blueberries at Trader Joe's this weekend so I had to add them to my salad somehow.  Why not?  This salad turned out delicious!  The blueberries were plump and juicy with just the right amount of sweetness in them.  They paired perfectly with the walnuts. 

Here are the details you need to make this salad at home:

Ingredients
All ingredients are from Trader Joe's 

4 servings
1 bag of organic spinach
1 cup of organic blueberries 
1/2 cup raw pecans 
1/4 cup hemp seeds 
dressing:
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp light agave syrup
salt

Rinse the organic spinach and the blueberries.  Mix together.  Add the hemp seeds.  Mix.  Add the pecans.  Mix again.  Prepare the dressing.  Drizzle the dressing and combine well.  


Have you tried adding hemp seeds to your salad?  I've been using them a lot as of late.  They are a great source of good fats and protein.  Hemp seeds are considered a complete protein source because they provide all of the essential amino acids, so even if you are not eating animal protein you are still getting all of your nutrition.  They really don't have much of a taste in salads so you don't know they're there.  Try them!
