LUNCHBOX IDEAS :: KALE SLAW APPLE STIR FRY

This stir fry does not contain egg, dairy or wheat.  


I had St. Patrick's day in my mind when this dish came together even though we never actually made it to the parade.  All that cole slaw at the store inspired me to do something with it.  Kale had to be part of the picture, obviously.  I kept things simple-  less is more- and just added some Gala apples for some flavor.  It works!  


Ingredients

4 servings
1 bag of Tuscan kale
1 bag of cole slaw
2 Gala apples 
2 green onions
1 clove of garlic 
vegetable broth
olive oil
salt

Wash the apples and peel into cubes.  Rinse the kale and the cole slaw.  Peel and cut the garlic and the onions.  Saute for a couple of minutes until fragrant and add the kale.  Saute for a couple of minutes.  Add the cole slaw and mix.  Cook for a few minutes.  Add the vegetable broth and cover for a few minutes until the kale cooks.  Add the apple last and stir gently.  Cover for a few minutes.  Season to taste.  


Voila!  Simple, healthy and filling.  I'll be enjoying this dish at school for lunch for part of this week.  


When I make this dish again, I will try to add some nuts for more texture.  I thought about this today at lunch.  Other than that, it's pretty on point.
