LUNCHBOX IDEAS :: CRUNCHY SPINACH SALAD


Do you like to cut up vegetables or does it drive you crazy?  My chef knife skills have improved gradually over the years and these days I really enjoy cutting up the veggies.  On Sunday, as the kiddos were playing in the background, I decided I wanted to put together a salad with some crunch factor so it was veggie peeling and cutting time!


It's interesting to me how some of these recipes will come to me at the store and sometimes I just shop our pantry and veggie drawer.  Most of the time I can put something together that's well-balanced and appealing to Bill and I. 

Here are the details you need to make this salad at home.  All ingredients are from Trader Joe's.  

Ingredients

4 servings
1 bag of spinach
3 Roma tomatoes
3 small cucumbers
3 celery sticks
3 tbsp hemp seeds 
1 can of white beans 
olive oil
balsamic vinegar 
salt

Wash all the veggies.  Cut up the cucumbers, celery and tomatoes.  Mix gently.  Wash and drain the beans.  Incorporate to the salad.  Lastly, add 3 tbsp of hemp seeds.  Drizzle olive oil and balsamic vinegar.  Season with salt.  Mix everything gently.


Voila!  This salad is pretty awesome and so easy to put together.  I felt like I had been neglecting spinach for weeks now so it's back on the menu!  I'm loving these little cucumbers from Trader Joe's too.  At first I was reluctant to buy them but I must say, I think they work great in salads.  I like adding hemp seeds to salads because they are rich in essential nutrients and have some healthy fats and protein in them. 


For dressings, I tend to stick with olive oil and balsamic vinegar or red wine vinegar.  We used to be into salad dressings but I found that we would finish the containers and it felt like a waste.  Do you have a favorite salad dressing or do you use oil and vinegar too?
