Gluten-Free Chocolate Snack Balls

These snack balls do not have gluten, dairy or egg.


After Thanksgiving, life gets hectic.  We are getting ready for Christmas, school is wrapping up for the holidays, there are functions, parties...The list seems never ending.  I find that good snacks help during this busy time more than ever.  If they have chocolate in the ingredients, then all the better, right?



I've been wanting to bake a chocolate protein snack ball that was high in protein, gluten-free and vegan.  I like the convenience of snack balls because you can pack them in a Ziploc bag and you are good to go.  These snack balls feel very indulgent but are actually pretty clean and good for you!  They will help satisfy a chocolate craving too!

Here are the details for this delicious snack you will want to try!

Ingredients

1 cup Bob's Red Mill almond flour
2 scoops Live Vegan Smart Chocolate Fudge pea protein powder
1/4 cup unsweetened cocoa
1 tsp baking soda
1/4 cup smooth peanut butter
1/4 cup agave syrup
1 1/2 cups almond milk 

Preheat the oven to 350F and spray the bottom of a donut hole tray with oil.  Mix the dry and wet ingredients separately.  Combine them together until everything is well-incorporated and smooth.  Scoop out 1.5 tbsp of mix and roll into a ball.  The mix will be a little sticky. This mix is enough for about 12 balls.  Bake in the oven for 15 minutes.  Allow to cool on a rack and transfer to an airtight container.  You can store them in the fridge for about 4 days although they'll be gone before that!


Serving size is one ball or you can do two for breakfast.  The protein content is pretty decent!  They have a fudge-like texture and are rich in chocolate flavor.  You won't want to stop at one!
