Gluten Free Vegan Protein Brownies

These brownies do not have gluten, dairy or egg.  





This post is done in collaboration with Vegan Smart.  They provided me with the pea protein powder I used in this recipe.

These brownies are a chocolate lover's dream!  They are easy to make and very satisfying.  These brownies are also vegan to accommodate more dietary needs/preferences.  Here I used chia seeds and almond milk to substitute for the eggs.

Now lets talk about the recipe itself.  Here are the details:

Ingredients:
  • 1.0 cup black beans
  • 2 tbsp unsweetened cocoa powder
  • 4 oz unsweetened applesauce
  • 1 scoop Vegan Smart chocolate fudge pea protein powder
  • 1 tsp vanilla
  • 1 tbsp coconut oil
  • 1/4 cup Bob's Red Mill quinoa flour
  • 1/4 cup Enjoy Life allergen friendly chocolate chips
  • 2 tbsp chia seeds 
  • 6 tbsp unsweetened almond milk 
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Preheat the oven to 350F and line the bottom of an oven tray with parchment paper.  My tray is about 9 x 13.  Mix two tablespoons of chia seeds with 6 tbsp unsweetened almond milk and let them sit for about 10 minutes until it forms a gel mixture.  Wash the black beans and add them to your blender.  Incorporate the rest of the wet ingredients and blend.  Mix the dry ingredients in a bowl and combine with the wet ingredients.  Pour your mix into your lined oven tray and sprinkle the chocolate chips on top.  Bake at 350F for 25 minutes.  Allow to cool and cut into portions.  I got 10 servings.


These brownies are just delicious!  They are fudgy and satisfying.  They will take care of those chocolate cravings.  The brownies are low in carbs and sugar but still have a decent amount of protein per serving.


We have been enjoying these brownies after school.  My kids feel like they are having a treat but they are getting something healthy and satisfying-  Mom win!
