Gluten-Free Plantain Chocolate Muffins


I've grown to like plantains over the summer.  I like the convenience of being able to prepare my mix in a blender and I also like that they are nutrient dense.  They are high in vitamins A, C, B6, fiber and magnesium so they are beneficial for our immune and digestive systems among others.  And to think that I did not use them for the longest time because I was never sure if they were ripe enough...




The multi tasker in me got the idea of these muffins as I was starting dinner and, of course, I had to try it.  Luckily for me, this time around things worked out great and I was even able to take pictures after dinner (thank you summer!).

Here is the recipe I used:
Ingredients:
1 bag of frozen plantains (Trader Joe's)
1/4 cup unsweetened cocoa
1 egg
1 cup almond milk
2 tbsp agave syrup
2 tbsp coconut oil
1 tsp baking soda
1/2 cup coconut flour
1/4 tsp salt
1 scoop Vegan Smart pea protein powder
cocoa nibs for decorating

Place the plantains in the fridge the night before you will use them so that they thaw.  Preheat the oven to 350F and spray the bottom of a muffin tin with oil.  Blend the plantains until you have a smooth puree.  Add the rest of the wet ingredients and mix together.  In a separate bowl, mix the dry ingredients.  Combine the wet and dry ingredients together.  Fill the muffin tins about 3/4 full and smooth the tops with the back of a spoon.  Decorate the tops with cocoa nibs.  Bake the muffins for about 30 minutes or until a knife comes out clean.  Let the muffins cool on a rack.


These muffins have the consistency and feel of a brownie. If you like chocolate, you will want to try these! The cocoa nibs are the perfect complement.



Here are the nutrition facts for these muffins.  Not bad!  I think they work well for breakfast or for a snack.  If you feel like chocolate, I would reach out for one of these.  It is satisfying, but it does not have a ton of sugar or a high calorie tag.
