Last week when I was at Trader Joe's, I noticed they have mini plantains in their frozen section. I have tried to bake with plantains before but never seem to get them at the right stage of ripeness at the store. These frozen ones are a game changer. They are lightly steamed so I figured I could let them thaw and prepare the muffin mix in the blender. It doesn't get easier than that!
Here is the recipe I used for these muffins:
Ingredients:
1 bag of frozen plantains from Trader Joe's
1/2 cup of dates
1 egg
1 cup almond milk
1 tsp baking soda
1/4 tsp salt
1 scoop Naturade vanilla pea protein powder

I preheated the oven to 350F and lightly greased a muffin tin. I blended the wet ingredients in my Ninja blender. When everything was well-blended, I added the dry ingredients to the wet ingredients and stirred until the mix was smooth. This mix is enough for nine large muffins. I baked the muffins for 25 minutes until the toothpick came out clean.
I am obsessed with the taste and texture of these muffins. They are moister than my regular muffins and have a fudge-like texture. They are delicious- sweet and filling. They will satisfy a chocolate craving too. It worked for me at least.
Here is the nutritional content of these muffins. They are naturally sweetened by the dates, which also provide some fiber content. I like how they have a good amount of fiber per muffin.
These muffins are good at any time. You can have them at breakfast or as a snack. They are easily packed in a Ziploc bag if you are on the go too!
