Gluten-Free Coconut Matcha Power Balls


These matcha protein balls were a bit of an experiment.  In the morning I made some sunbutter ball snacks for my kiddos and, given their huge success, I wanted to make a matcha version of this fun snack.  I was looking to use coconut butter in them but was not able to find it in our neighborhood store so I went with coconut oil instead.  Next time I'll try the recipe with coconut butter if I manage to find it.  I know I used it this summer a lot but haven't seen it at the store for a while.
 
Here is the recipe for these delicious protein balls:

Ingredients
1.5 cups shredded coconut
1/2 cup Naturade pea protein powder
2 tsp matcha green tea powder
1 tsp vanilla flavor
1/8 cup maple syrup
5 tbsp coconut oil

Mix all the ingredients together-  this will take some time.  Scoop out 1.5 tablespoons and roll into balls.  You will need to wash your hands a few times as you make the balls.  Alternatively, you can probably put the mix in the fridge for the coconut oil to harden.  My toddler was close to waking up so I wanted to get these done and just went with it.   

I like how this snack is satisfying because it contains a good balance of both plant-based protein and good fat.  The added matcha brings additional beneficial metabolic and health benefits.  It's a win win!  They taste amazing-  highly recommend!
